April 2024 marks the presentation of Air France's new spring menus<\/strong>which continues to position itself as theambassador for French gastronomy<\/a><\/strong> around the world.<\/p>\n

On departure from Paris, three Michelin-starred French chefs Glenn Viel and Arnaud Lallement are offering exceptional new dishes in the La Premi\u00e8re and Business cabins. They rub shoulders with renowned pastry chefs Philippe Rigollot and Nina M\u00e9tayer. In the Premium Economy cabin, Michelin-starred Fr\u00e9d\u00e9ric Simonin continues to delight customers with his delicious new recipes.<\/p>\n

To create these menus, the chefs worked in collaboration with in-flight catering specialist Servair<\/strong>a long-standing partner of Air France. The menus selected focus on fresh, local produce that changes with the seasons<\/a>. A responsible approach, the meat, poultry, dairy products and eggs on each menu from Paris are of French origin, and the fish from Paris is sustainably caught<\/strong>. In addition, in all travel cabins there are vegetarian menus are systematically offered<\/strong> on all the company's flights.<\/p>\n

Three Michelin stars in the La Premi\u00e8re cabin...<\/h4>\n

In the cabin La Premi\u00e8re<\/strong> from Paris, the three-star French chef Glenn Viel<\/strong> is responsible for the entire menu. He offers twelve exceptional dishes combining his Breton roots with Proven\u00e7al cuisine. These include a Mediterranean bread and pepper confit with rosemary, stuffed with fromage frais, rocket and pickled lemon, a fillet of sea bream with potatoes, mussels and a lemon sauce, and roast guinea fowl topped with a mosaic of crisp courgettes and a caramelised onion compote.<\/p>\n

Desserts<\/strong>Since 2023, Air France has entrusted their development to Nina M\u00e9tayer<\/strong>She has been named \"World Pastry Chef 2023\". She has come up with three new pastries, including \"Allumette noisette caramel et velours chocolat noir\", \"Allumette coco citron vert mangue\" and \"l'individuel\" au chocolat.<\/p>\n

Air France is offering menus designed by three-star French chef Dominique Crenn in the La Premi\u00e8re and Business cabins in the following categories United States<\/strong>. Since February 2024, these dishes have been available on departure from Chicago, Los Angeles, Miami, New York-Newark, San Francisco and Seattle.
