[Paris] Toyo

This is the most confidential address of the season. A decor of elegance and restraint, with a menu of the most subtle flavours.

Toyomitsu, former private chef to fashion designer Kenzo, is an artist who doesn't allow himself to be pigeon-holed into any one genre, offering a true cuisine d'auteur, halfway between France and Japan. Particularly noteworthy are the mackerel and its seaweed tartare, the turbot marinated between two sheets of kombu and thin slices of bottarga with dill...

For dessert, a few iodised mignardises or a Toyo cheesecake. All prepared to the millimetre and full of emotion.
