
Orchestrated by Michel Troisgros - heir to the famous Roanne dynasty - and executed by Michel Roucheteau, the Lancaster's Michelin-starred cuisine is above all a matter of originality and liveliness, expressed throughout a menu organised by theme. The brightness of lemons and other citrus fruits, the spiciness of condiments and spices, the greenness of vegetables, herbs and fruit, or the tartness of dairy products...
The approach, at first sight a little conceptual, results in real marvels like these oysters and shellfish in clementine vinaigrette, these shavings of fresh foie gras with hibiscus or these goat's cheese cannelloni with wild herbs. Then it's time for sweets: field of wild strawberries with verbena or chocolate soufflé with Cambodian red pepper. All served in the exquisite setting of this former private mansion and, throughout the summer, in the garden decorated with exotic wooden furniture and refreshed by a small river surrounded by pebbles. A sure bet.
