Michelin-starred menus for Air France Premium passengers

Air France is pulling out all the stops until October on its high contribution classes. The airline has called on stars of French gastronomy to concoct exceptional menus. To be enjoyed without moderation...

From July to October 2022, Air France unveils from Paris new Michelin-starred menus by top French chefs Michel Roth and Anne-Sophie Pic in its long-haul cabins La Première and Business.

Working with seasonal produce, vegetarian dishes, red and white meats and fish, the chefs have come up with refined dishes to be enjoyed until the end of October. In this way, Air France intends to continue to offer its customers exceptional French gastronomy that's more sustainable and responsible.

For customers in the La Première cabin, Michel Rothstarred chef, Bocuse d'Or winner and Meilleur Ouvrier de France, has come up with dishes that are resolutely French, gourmet and refined. The chef has composed an appetizer, a starter and eight dishes progressively unveiled on the à la carte menu.

  • Sturia caviar escorted by a crepe with smoked fish cream (appetizer) ;
  • Lobster and green asparagus with raspberry vinaigrette (starter) ;
  • Beef fondant, pan-fried foie gras, truffle sauce, asparagus, porcini mushrooms ;
  • Veal simmered with verbena, vegetable fricassee and morels ;
  • Free-range chicken with rosemary, sweet pepper tart and stuffed courgette flower ;
  • Chicken supreme with olives and black truffles, artichokes and macaroni gratin
  • Quinoa with preserved lemon, sun vegetables and basil cream ;
  • Truffled polenta, green vegetables, pea and mint coulis, carrot juice ;
  • Fillet of brill with shellfish jus served with stewed green vegetables and mussels ;
  • Prawns, tarragon lobster sauce, baby spinach, red rice.

Air France continues to work with 3-star chef Anne-Sophie Pic which this season has created eight tasty dishes for cabin passengers Long-haul business.

  • Braised beef cheek, potato mousseline, plum chutney, tarragon breadcrumbs;
  • Roast poultry, small spelt risotto, courgettes with green cardamom ;
  • Saithe with seaweed, lovage sauce, Camargue red rice, spinach and fennel compote ;
  • Artichoke barigoule, creamy polenta, smoked vanilla Buratta coulant, tangy tomato coulis ;
  • Poached coalfish with curry and coconut milk sauce, black rice ;
  • Beef cheek stew with coffee and sweet onion consommé ;
  • Poultry with tonka bean sauce and creamy polenta with mushrooms ;
  • Pasta conchiglie, chard and lemon coulis, lightly smoked creamy ash goat's cheese, roasted pumpkin seeds.

More responsible gastronomy and the option of pre-ordering your dish

By the end of 2022, Air France is committed to offering 100% meats, dairy products and eggs of French origin on all its flights departing from Paris. The company will also only use fish from sustainable fisheries. A vegetarian dish will also be systematically offered and all meals will be prepared entirely in France. The company favours local products, respecting seasonal variations and encouraging sustainable farming practices. This strategic shift concerns all classes of service.

And also.., as part of the fight against food wasteThis year, Air France is rolling out the option of pre-selecting a hot meal in the Business cabin before departure. This service combines guaranteed availability of the customer's choice with fairer consumption.

And finally.., Air France commits to recycling and eliminating 90% of plastic on board its aircraft by early 2023. Finally, when certain items can no longer be taken on board, they are donated to charities.
