La Compagnie: new menus and 100% organic wines

La Compagnie is launching its new gastronomic menu between Paris and New York, as well as a selection of organic wines created by expert sommeliers Bettane+Desseauve.

The carrier La Company has been working with the former Head of Matignon since the very beginning, Christophe Langrée, in the development of menus with unique flavours. Since 2017, other Renowned chefs also offer signature dishes at card complement for a month.

For the weeks ahead, The Company has given carte blanche to the following chefs:
November 2022 The Chef starred Nolwenn Corre has created an iodised menu in homage to his native Brittany. Lobster Topinambour with vanilla as a starter, and Sea bream and butternut with tangy butter and chestnuts as a main course.
December 2022 Two-starred chef David Toutain will be offering a Pressé of beef, potato and aubergine caviar, as well as a Blanquette of monkfish, coconut lemongrass and carrots with lemon balm. This menu will be available on board the December 24 flight to New York with Maison Bellorr, who will be accompanying the dishes with truffles and caviar for the occasion.
February 2023 Brazilian chef in New York Franco Sampogna signs a Blanquette de St Jacques and Cauliflower.
May 2023 The chef from Marseille Frédéric Duca, of the Rooster Batignolles restaurant, will kick off the summer with a marinated salmon with l'Espelette with kumquat and tarragon mayonnaise.

100% Organic wine list

What's more, The Company offers a 100% Organic wine list from the experts at Bettane+Desseauve. It is renewed every month. " You can't enjoy a good meal without a good wine. Organic wines are a new trend that is developing in the finest restaurants. We wanted to invite the passengers of La Compagnie à discover this new way of enjoying their meal à 10,000 metres above sea level " explains Thierry Desseauve, founder of Bettane+Desseauve.

The 100% Organic vintages selected include Pessac Léognan Smith Heights, Domaine de la Solitude and Cross de Carbonnieuxa Pomerol Benjamin de Beauregard, a Chablis Simonnet Febvre, a Mercurey Château de Chamirey, a Chateauneuf du Pape by Romain Duvernay or still a Margaux Mons Tower.
