Hotels
Park Hyatt Hamburg
Located on one of Hamburg's busiest shopping streets, the Park Hyatt and its 252 rooms take on the surprising challenge of being one of the city's quietest hotels. Its spirit is almost reminiscent of a mountain, with so much light and warm wood. Upstairs, the lobby is very intimate, while the smoking room has a British feel. The main restaurant, Apples, serves regional dishes based on high-quality local produce.

Mövenpick hotel Hamburg
Opened in 2007 in a former nineteenth-century water tower, this 226-room hotel with its ultra-sober post-industrial charm, all in brick, is well worth a diversion, or even a stay. Especially if you opt for the Tower Suite and its 360° view over the whole city.

Hotel Louis C. Jacob
The restaurant, opened 225 years ago by a Huguenot by the name of Jacques, is now a leading member of the Leading Hotels. The eighteenth-century building on the banks of the Elbe is filled with Biedermeier furniture, paintings and engravings, including some by Max Liebermann, the Impressionist painter who spent an entire summer there. The restaurant, whose magnificent terrace is shaded by lime trees, boasts two Michelin stars. Needless to say, business travellers are eager to return to this august residence with its creaky wooden floors.

Literally translated: great pad. Yes, there's a student feel to this hotel, which opened a year ago. But the owners of the 25Hours group, these stylish and truly upmarket creatives, are behind the concept. Nothing to fear, apart from a relaxed atmosphere that plays on offbeat codes. Restaurants
Carls
This chic brasserie, run by an Alsatian chef, takes its inspiration from French classics, but revisits them in Hamburg style. Here, the famous filet of herring rubs shoulders with the hexagonal steak frites and the wine list is very extensive, especially the delicious Riesling and other Germanic vintages. Another original feature is that the menu is accompanied by a musical score. Why a musical score? Because just behind the windows of the room, which stretches along the quays, is the silhouette of the Elbphilarmonie, the future mega-concert hall in Hafen City.

Riverkasematten
Originally a fish market tunnel in 1865, it became a bunker during the war and then an ultra-famous jazz cellar in the 1950s. Today, this restaurant facing the harbour is a Hamburg landmark. People come here for its weekend brunches, its admirable sushi and its freshly caught fish dishes. And also for its beautiful terrace in summer, almost with its feet in the water.

Bullerei
The name comes from Bulle, German for bull. So you'd better love meat when you enter these magnificently renovated former abattoirs, where butcher-style glass fridges display the good cuts still in their raw state. You'll find some of Hamburg's finest fillets, steaks, squares and rib steaks on your plate.

Wasserschloss
This "castle on the water" offers an enchanting setting at the tip of an island between two canals, in the Hafen City district. Inside, the cobbled floor is still intact and dented, but the decor could have done with a little more work. The dishes on offer are inventive, like the traditional schnitzel... revisited with green tea. A pleasant place for lunch.
