
The highly prestigious Crillon has taken the bold step of entrusting the running of its kitchens to a young 28-year-old chef, Christopher Hache, who in March took charge of all the hotel's restaurants: Les Ambassadeurs, as well as the chic brasserie (L'Obe), room service, the bar and the winter garden. For Les Ambassadeurs, this former lieutenant of Éric Fréchon has just presented his first menu, with some great successes: morels stuffed with Iberian ham and hazelnut foam; veal sweetbreads with cashew nut slivers, steamed early cabbage; jivara mousse (milk chocolate grand cru). His challenge: to win back the two stars he lost after Piège's departure.
