GETTING THERE
SINGAPORE AIRLINES currently offers seven weekly flights between Paris and Singapore, operated by A380. But from 29 October, SIA will be offering three extra flights on Mondays, Thursdays and Saturdays, departing from Paris in the early evening and arriving in Singapore in the early afternoon of the following day. This is a real plus for business travellers, who will be able to travel at times that will help them to cope with the jet lag. During winter 2017-2018, these new flights, as well as the current seven weekly flights, will be operated by Boeing B777-300ER quad-class aircraft, including a Premium Economy cabin, launched at the end of 2015 on Paris-Singapore flights. Champagne will be served before departure, as in Business. Above all, there are more spacious seats than in Economy - almost 50 cm wide - in a 2-4-2 seat configuration. Nothing compares, of course, with the 86 cm leather seats in Singapore Airlines' famous Business Class, some of the most comfortable on the market and which transform into real beds with duvets. Better still, but in the wildest dreams, you can also aim for First Class, pure luxury. Four of the twelve Suites can be converted into a double bed. SIA is now offering an Internet and mobile service on board its A380s, A330s and Boeing 777s.

AIR FRANCE operates a daily flight between Paris CDG and Changi, with night flights in both directions. These routes are operated by Boeing B777-300Rs featuring the new cabins in the four classes of travel, including a First and a Premium Economy cabin. The airline has also signed a codeshare agreement with Singapore Airlines for its flights from Singapore to Melbourne and Sydney, as well as the routes operated by SilkAir from the City-State to Kuala Lumpur, Penang and Phuket.

This Peranakan restaurant, in other words, with its Chinese-Malay culture, was a truly wonderful discovery. Firstly because the place, housed in a former British army barracks in the Dempsey district, is splendidly decorated, very spacious and has an ultra-casual atmosphere. But more than that, because its very young chef, Malcolm Lee, is a divine creator who revisits his mother's and grandmother's recipes with great grace and simplicity. The result is flavours to die for, in particular blends of coconut and keffir lime - that fragrant lemon leaf - which give a great finesse to fish, pork or beef stews. It's sublime, especially as the desserts are also a masterpiece. Which is why this chef more than deserves his very first Michelin star.
