In this area, Michel Troisgros is a master, and we can only applaud the choice of Michel Roucheteau to take over the stoves at the Lancaster after several years working alongside the master. He has drawn on a wealth of expertise, coupled with remarkable intuition. The proof is in the form of a menu that is rare in a Parisian palace: a formula at 45 euros with a choice of two starters, two main courses and two desserts. Just reading the menu makes your mouth water: salmon saltimbocca on a celery tartar, roast filet of duck with fennel confit, mango petit gâteau... Add to that the fact that these delights are enjoyed in a beautiful gold and sand room and you'll know the essentials. The Lancaster has established itself as one of the best restaurants in Paris.
