
Air France is renewing the catering service for its three premium cabins on long-haul flights departing from Paris. Six signature French cuisine dishes are featured on the menus of La Première, Business and Premium. The chefs work with Servair’s Culinary Studio, a catering subsidiary and partner of the airline. The dishes are seasonal and change over the course of the months.
In the La Première cabin, Arnaud Lallement, triple-starred chef at L’Assiette Champenoise in Reims, has created more than thirty entrees and hot dishes. He was already associated with the company in 2024. The menu alternates vegetarian dishes, fish, red meat and poultry.« For Air France customers, I wanted to remember the seasons, let my unconscious speak, as in hypnosis »That's it," explains the chef. Claire Heitzler, head pastry chef of the 2013 edition of Gault & Millau, will also continue her collaboration by offering four desserts in the coming months.

Pre-selection of the hot dish in Business
In long-distance business, Mathieu Viannay, the chef at La Mère Brazier in Lyon, has signed off on the hot dishes for the first time. He has devised more than twenty recipes.« For Air France, I imagined dishes that combine products from our French regions and, above all, indulgence! »It's a great opportunity to try something new," he says. François Adamski, Corporate Chef of Servair and Bocuse d'Or, prepares the breakfasts and brunches. These are for flights that are scheduled to depart no later than 9:30 a.m. Nina Métayer, for her part, takes care of the desserts. Business passengers can also pre-select their hot dish up to 24 hours before departure. The airline presents this service as a way to combat food waste.

In Premium, Frédéric Simonin, the star chef of the Parisian restaurant bearing his name, offers two renewed hot dishes, including a vegetarian option. In all the cabins, Air France serves exclusively meat, poultry, dairy products and eggs of French origin. The fish comes from French fishing or from sustainable sources. This announcement comes two weeks after the Skytrax World Airline Awards. On September 18, Première received the award for the best First Class in the world.
